  Karai is also spelt Karahi, korai etc. and refers to a utensil resembling the cast iron wok within which it is made.

Chicken Karai - Traditional Pakistani Chicken Curry

Ingredients:

1kg chicken pieces
1/2kg diced tomatoes
garlic paste
chopped coriander leaves
7-8 green chillies
5 whole red peppers
2 tsp salt
2 tbsp oil

Method:

Take the chicken pieces and marinade in the garlic paste. Then heat some oil in a wok (known as 'Karai') and add red peppers to brown. Add the marinated chicken to the wok. Let the chicken cook on low flame until it becomes slightly tender. Add the diced tomatoes mixing them thoroughly with the chicken. Let this cook also on a low flame for 15 minutes and serve it by garnishing it with green chillies and coriander.
